Studies on city development are usually linked to the development of economic infrastructure, such as industrial areas, ports and plantations. On the other hand, studies on the relationship between culinary delights and city development are very difficult to find. Therefore, this research examines the development process of the city of Matang Glumpang Dua in relation to the emergence and development of sate matang culinary delights. Documentation of the results of this study is important because it offers a new aspect in the study of urban development. become a source of new knowledge that can inspire and motivate. To obtain comprehensive data, this study fully uses critical historical methods. Data collection was carried out using documentation studies and oral history methods. To produce authentic and credible information, both data are processed through stages in the critical historical method. From the research results, it can be concluded that the development of the town of Matang Glumpang Dua is parallel with the emergence of the new culinary delights of sate matang. The location of this town, which is in the middle of the land route between two provincial capitals, Banda Aceh and Medan, makes Matang Glumpang Dua an excellent stopover for buses, trucks and private cars. The introduction of sate matang culinary around the 1970s further strengthened the town 's function as an ideal stopover place. To support this function, the pattern of shop construction in the town of Matang Glumpang Dua, which was previously along the road to the south towards Almuslim University, has changed to the east-west side on Jalan Medan Banda Aceh. Many of these shops function as almost all of them offering sate matang culinary delights. Currently in the small town of Matang Glumpang Dua there are 15 stalls serving sate matang culinary delights. Apart from being the best stopover place with its unique culinary delights, the development of the city of Matang Glumpang Dua was also influenced by the development of the Muslim University. The change in the status of this higher education institution to a university further accelerated the development of this town.
